The same thing happens to liquid nitrogen dropped onto a hard surface at room temperature. This is caused by the huge difference in temperatures. (I don't remember exactly why from my thermodynamics class though.)

- Yes...
The bottom of the pan does get a little burnt. But I was able to scrub it off. To me, it's worth the experiment, even if you end up losing a pan. It really is amazing to see the water surviving in a boiling hot pan.
